The Dreaming Of… series returns, once again showcasing a single hop variety through the lens of a DDH IPA. This time, Track Brewing Company turns the spotlight on Mosaic—surprisingly, for the first time in this series. A cornerstone of Track’s brewing, Mosaic plays a key role in the flavor profile of Sonoma and has been a favorite since it first hit the market in 2012.
For this release and the year ahead, Matt and Harry from Track Brewing Co. have hand-selected Mosaic from Lakeside Ranches, a fourth-generation hop farm in Salem, Oregon, run by Erica and Jake Lorentz. Their Mosaic exemplifies everything this hop has to offer—bursting with intense tropical fruit, balanced by delicate floral notes and a fresh, grassy vibrancy. By exclusively (and generously) dry-hopping with the freshest 2024 crop, this IPA allows Mosaic to take center stage, celebrating its complexity and character in full.
